Make an Umami-Packed Demi-Glace Using Nothing But Vegetables

Demi-glace (a rich brown sauce usually made with veal stock) is delicious on pretty much everything (pasta, meat, veggies, etc.), but this umami-bomb is off-limits to the meat-free folk.
